I can remember my mom making biscuits when I was very young. She would use Crisco instead of butter. I guess that's because she made pies every weekend and used Crisco for the shells. Everything was made from scratch, no frozen pies back then. With 8 people too feed, desserts were plentiful! Ok, so I'm not a great baker but I am learning as I get older, by looking up recipes on Pinterest. I found this one but i changed it a little to suit my way.. ok so I wanted it easier and Gluten Free. Of course if you want regular just use flour.
Bo Berry Biscuit Recipe
Biscuits:
2 Cups Gluten free Flour
1/3 Cup sugar
4 tsp baking powder
1 tsp salt
1 Cup milk (or buttermilk)
5 T of butter
3 oz of blueberries or raspberries (fresh or dried)
Glaze:
1 Cup of powdered sugar
1/8 Cup of water
1 tsp of vanilla
½ tsp of lemon juice
Directions:
Freeze butter squares. Preheat oven to 450F. Mix salt, sugar, GF flour, and baking powder in a bowl and sift. Add the cold milk into dry ingredients and mix by hand. As dough begins to form, use a cheese grater to grate your frozen butter evenly over dough. Fold dough and knead… repeat until all butter is spread evenly throughout dough.
Fold in the berries. Dough may be too sticky to handle. Spoon onto un-greased cookie sheet.
Place in oven and bake for about 7-12 minutes (until golden). Mix glaze ingredients in a bowl, and drizzle over Bo Berry Biscuits.
