Bo Berry Biscuit Recipe

I can remember my mom making biscuits when I was very young. She would use Crisco instead of butter. I guess that's because she made pies every weekend and used Crisco for the shells. Everything was made from scratch, no frozen pies back then. With 8 people too feed, desserts were plentiful! I will get into the desserts my mom made in another post. in the meantime, enjoy this recipe that is a Bojangles rip off,

Ok, so I'm not a great baker but I am learning as I  get older, by looking up recipes on Pinterest.  I found this one but i changed it a little to suit my way.. ok so I wanted it easier and Gluten Free.  Of course if you want regular just use flour.

Bo Berry Biscuit Recipe

 Biscuits:

2 Cups Gluten free Flour
1/3 Cup sugar
4 tsp baking powder
1 tsp salt
1 Cup milk (or buttermilk)
5 T of butter
3 oz of blueberries or raspberries (fresh or dried)

Glaze:

1 Cup of powdered sugar
1/8 Cup of water
1 tsp of vanilla
½ tsp of lemon juice

Directions:

Freeze butter squares.  Preheat oven to 450F. Mix salt, sugar, GF flour, and baking powder in a bowl and sift. Add the cold milk into dry ingredients and mix by hand. As dough begins to form, use a cheese grater to grate your frozen butter evenly over dough. Fold dough and knead… repeat until all butter is spread evenly throughout dough.

Fold in the berries. Dough may be too sticky to handle. Spoon onto un-greased cookie sheet.

Place in oven and bake for about 7-12 minutes (until golden). Mix glaze ingredients in a bowl, and drizzle over Bo Berry Biscuits.

The Boat!

She gets a new name.. coming soon!

All 37ft!
We finally got a boat, well some call it a yacht, I call it a new adventure! It's a Silverton convertible, 37 ft!

I'm excited to start some new memories with family and friends. I have a fishing pole and license so I'm ready to go!

She's getting a new name soon that my husband is choosing.
I'm excited about adding my own personal touches to the inside. Won't be doing a lot, mostly just brighten it up with lots of color,  make new curtains and hang some pictures, I will post some before and after pictures as time goes on. Just want it comfortable for us to take a few trips or just relax on the boat a few days at a time.

The hubby is making changes too. He added a new radio and updated the GPS and is working on a few other things.

It will be interesting to go from a 4 bdrm, 2 bath, big kitchen ... to a tiny bathroom with shower, a bedroom (called a birth), a "galley"(aka, a kitchen).  Not to mention not big closets..lol. For now, we have waterfront property, ;-)

They say the 2 best days of owning a boat are the day you buy it and the day you sell it. Well I am happy for now!

As long as I have a coffee pot.. all is good....
